The Stone Barns Center for Food and Agriculture, a nonprofit regenerative farm and educational center, opened in 2004 on the site of a former dairy farm. The compost oven wasn’t reliable, she says, so the restaurant had prepared the eggs in the same kind of immersion circulator used in kitchens around the world for sous vide cooking.
