UK: Hotelier Mark Fuller and Michelin-star chef Garry Hollihead have reunited after 10 years to launch a Japanese restaurant Wild Heart at Karma Sanctum Soho Hotel in London.

Fuller and Hollihead have developed a Japanese casual dining restaurant which has debuted at Karma Sanctum Soho Hotel. The launch follows a £500,000 refurbishment of the 30-room property which included most of the guest rooms, the rooftop and the new restaurant.

Eventually, Wild Heart will be introduced at Sanctum on The Green in Berkshire. 

Sherene Fuller will manage Wild Heart having gained experience at exclusive restaurants such as Zuma and Coya.

Hollihead said: “I’m excited to be launching Wild Heart. Japanese cuisine has always been a passion of mine, and I’m thrilled to be able to share my take on it with our guests. We’ve worked hard to create dishes that are both authentic and innovative.”

M. Fuller added: “Although we each enjoyed our individual successes, when the opportunity to work together again came along, we both knew that we would create something special. We’ve done it many times before and Wild Heart is just one of the many projects in the pipeline.”

In the past, Fuller and Hollihead have collaborated on projects including Sugar Reef, Geals, Red Cube, and Embassy London and Dubai.
