Surfing the Menu chef Ben O’Donoghue is returning to the kitchen with a new gig.

The culinary talented has been announced as the executive chef of Brisbane restaurant Establishment 203, which will open in late November.

Guests can expect a menu based on an Italian steakhouse concept, with plenty of pastas inspired by the chef’s time at the River Cafe in London and locally sourced proteins including beef from a generational cattle farming family.

The kitchen has a point of difference in the form of an MKN induction cooking suite, a first for Queensland, as well as wood-fired Mibrasa cooking stations fuelled by charcoal sourced from cattle properties.

“With a focus on procuring the best of Queensland’s exceptional seasonal produce from the land, sea and rivers, the menu will embody sophistication teamed with exceptional service,” says O’Donoghue.

“With an ability to control quality from paddock to plate including breeding, feed, ageing, cooking, and plating, diners will be assured of the very best steak in the country.”

The Marshall Street venue will also serve a range of drinks from rare Italian wines to signature cocktails and Brisbane craft beers.

Establishment 203 is slated to open its doors on 28 November.
