Melbourne’s St. Ali has opened a day-to-night concept in the Queen Victoria Market.

St. Ali & The Queen is located in the new Munro development and is described as a European-style concept serving specialty coffee, cocktails, and a market-focused food menu.

“Coffee brands and cafés have a hard time transitioning from day to night, and very few venues have managed to do it well so for us, The Queen is a physical manifestation of our desire to get into the night life environment,” says St. Ali CEO Lachlan Ward.

“There’s very few, if any, that offer roaster-driven alcohol products within this space, so we’re really proud to be one of the first off that starting block.”

Executive Chef Greg McFarland has put together dishes that hero the best of the best produce available at the market, with morning dishes including duck eggs with bread and tomato and a pretzel bagel with cured ocean trout, dill, and creme fraiche.

There’s also a selection of to-go sandwiches and pastries available for lunch alongside goods from the pantry.

Snacks are the focus when the evening rolls around, with guests able to choose from roasted bone marrow on toast with anchovy, pickled shallots, and nduja, cured mackerel with tomato, caper, and herb salad, and seasonal additions.

Acclaimed bartender Orlando Marzo is behind the cocktail list, which also sees the inclusion of his own brand of bottled cocktails Loro.

Marzo has integrated coffee into cocktails including a cascara Bellini and a tipple made with coffee liqueur.

“I’m very excited to collaborate on an all-day bar that captures 360 degrees of hospitality from coffee and pastry in the morning, to all-day aperitivo with cocktails and food,” says the bartender.

St. Ali & The Queen is open seven days a week from 7am.
