Chef Mauro Colagreco will bring his globally acclaimed French restaurant Mirazur to Sydney this March.

From 10 March until the end of the month, Colagreco and select members of his team will take over The Gantry at Pier One Sydney, serving a set menu that heroes Australian produce as part of the Mirazur Beyond Borders program.

“Mirazur Beyond Borders is the opportunity for us to enrich our knowledge, philosophy and commitment,” says Colagreco.

“I have visited Australia a few times and what excites me is that it is a country where there is a huge diversity of nature, landscapes, and species.

“It’s very important for me and my team to learn from and experiment with the ingredients we find in the country we visit, and to learn from all the people and products we encounter on the way.”

The multi-course tasting menu is priced at $685 per person and will run across lunch and dinner sittings from Wednesday to Sunday.

Colagreco will be joined by Mirazur’s Executive Chef Luca Mattioli, sommeliers, front-of-house members, kitchen staff, Garden Scientist Silvina Dayer and COO Maria Tancredi, who will all work together to create an original menu and beverage offering for the residency.

Mirazur, located in Menton, France, was named the number one restaurant in 2019 by The World’s 50 Best in 2019, marking the first time a restaurant from the country secured the top honour.

Hospitality was on the ground at the event, attending a press conference with Colagreco who spoke after the momentous win.

“I have plenty of messages with this work,” he said. “I think something changed this year. Three Michelin stars for a non-French chef in France.”
