Bathers’ Pavilion is set to host top British Chef Simon Rogan this July as L’Enclume takes up residency at the much-loved Balmoral venue.

For five weeks, Rogan will serve up an eight-course menu alongside snacks and petit fours that showcase his sustainable and regenerative cooking ethos.

The menu will feature complex dishes from Rogan, highlighting his ‘perfect ingredient’ philosophy that revolves around the idea that the perfect dish can only be achieved by using the perfect ingredients.

It’s the first time Rogan is taking the L’Enclume experience abroad, and he will lead the team across every service during the residency.

The eight-course menu will be priced at $420 per person, with curated wine pairings also available for $190, $290 or $750 per person.

“The Sydney residency marks a big milestone for us as we enter our third decade and our boundary-pushing team could not be more excited to share our strong sustainability ethos and serve up some of our favourite L’Enclume dishes using the outstanding local ingredients unique to New South Wales and Australia,” says Rogan.

“Produce is our driving force and Australia has some of the best in the world. We are looking forward to experimenting with ingredients we haven’t had the opportunity to work with before and cooking them simply to highlight their natural taste, texture and fragrance and extract maximum flavour and interest.”

Oli Marlow, executive chef of Roganic and Aulis London and Hong Kong, and Sam Ward, managing director of Simon Rogan restaurants worldwide will be joining Rogan in Sydney, along with other key members of his kitchen and front of house team.

L’Enclume will be at Bathers’ Pavillion from Wednesday 19 July to Sunday 20 August, with bookings opening at 10am Tuesday 14 February.
