Chez Blue is the latest venue from the Solotel team that is slated to open its doors late October.

Located in Sydney’s Rozelle, Chez Blue will be a warming, neighbourhood-style French bistro.

Former Bistro Moncur Head Chef Mark Williamson will spearhead the culinary offering which is planned to boast French classics alongside some modern takes.

“We’d love for Chez Blue to become somewhere locals happily dine at a couple of times a week because it’s approachable and always delicious,” says Williamson.

“We’ll have familiar French classics on the menu as well as great daily specials so there’s always something new to try.”

The 90-seat restaurant is next door to the Sackville Hotel which is also part of the Solotel portfolio.

Solotel’s portfolio spans 26 venues across Sydney with Chez Blue the group’s first non-partnered opening.

The name Chez Blue is inspired by Solotel CEO Elliot Solomon’s first son, whose middle name is Blue.

“We want to bring back fond memories of dining on the streets of Paris, with warm service and an authentic French approach to relaxed dining,” says Solomon.

“Chez Blue is designed to be just as comfortable for a relaxed midweek dinner as a special weekend long lunch catch up with friends and family.”

Chez Blue is currently under construction and is set to open late October at 599 Darling Street, Rozelle.
