Colin Fassnidge’s hospitality group By Fassnidge will no longer run Sydney’s Banksia Bistro after six years.

By Fassnidge was originally entrusted by Monarch Group to revitalise the food offering at the pub, with the group selling the hotel to current owners Ryan’s Hotel Group in 2021.

“We set out to bring good hearty fare, cooked with passion, good produce and pride out to people beyond the bubble of Surry Hills and the CBD,” reads a statement from By Fassnidge.

“Having been fortunate enough to share our food philosophy with the community, we thought the time was right to step away from the Banksia Bistro and give someone else the opportunity to share their hospitality with the locals.

“We had no idea what Banksia was going to be when we started. Everything has its time and it has been a great run, but it’s probably the right moment for a bit of a refresh for us.

By Fassnidge will run its last service on Sunday 16 July, with the team spending more “quality time” at The Castlereagh by Fassnidge in Sydney’s CBD.

The bistro launched in the City Tattersells Club last year, with a suckling pig sausage roll fast becoming a hit with local diners.

“We’ll take a moment to catch our breath and see what comes our way.”
