Sydney-based sommelier Dennis Roman will host a one-night-only wine event this Wednesday at La Palma in Bondi.

Guests will get a glimpse into Roman’s portfolio and sample wines from Chilean natural wine producers along with South Australian maker Sven Joschke for $39.

“The new trend in minimal intervention is about drinking the wine young, fresh and to let the land and fruit speak for itself,” says Liber Osorio from Milpa Collective, operator of La Palma.

“The collaboration came from the long friendship we have and the idea of adding great wines at La Palma, trying to expand the character of a venue which … can showcase an amazing list for wine lovers.”

Expect wines including Cacique Maravilla Pipeno Pais, Gustavo Martinez Korinta Chasellas and Sven Joschke Rose which are an expression of their makers as well as the lands on which they were crafted.

La Palma’s Caribbean-leaning menu will be available on the night, with tropical guacamole, shrimp cakes, fish tacos and ceviche the perfect pairings with the wines.

The sommelier will also be bringing along additional bottles from his cellar for guests to enjoy, which will range from $60-200 in price.

Roman has been a part of the local hospitality landscape for years after beginning his career in South America.

He worked as Head Sommelier of Merivale’s Est. before going on to found his wine company Senses At.

Bookings are essential for the evening, which begins at 6pm and will run until midnight.
