The trio behind one of the country’s most exciting restaurants Pilot is gearing up to launch a new concept by the end of the year.

Owners Ross McQuinn, Dash Rumble and Mal Hanslow will expand their Canberra restaurant footprint for the first time with Such and Such – an all-day concept that revolves around a snappy wine program and a laidback approach to dining.

“With Pilot, we have created more of a destination diner, and we know people come to us for occasions and book far in advance,” says Rumble, group manager.

“We want Such and Such to be a ‘drop in’ place with plenty of room for walk-ins as well as bookings, and for drinkers and diners to have a little more fun.”

Nick Petersen has been appointed as head chef and will put together an a la carte menu decked out with share plates. Diners can expect oysters, snacks, pastas and whole fish to make an apperance.

Beverage Director James Dickson-Hoyle is focusing on local producers when it comes to the wine list, with labels selected according to their practices. There will also be classic cocktails as well as non-alcoholic options.

Such and Such is slated to open on Constitution Place in December, with an official opening date to come.
