Colombian-born chef Diego Cardenas will lead Collingwood’s next culinary addition Pincho Disco, which is set to open on 17 November.

Pincho Disco is the latest venue from the Kickon Group, which also runs The Terminus Hotel, Cinder, and Palm Beach’s The Collective.

Cardenas comes from time spent across venues in Colombia, Peru, and Spain, including at Colombia’s Harry Sasson; the Michelin-starred Casa Marcial; and as executive chef of Chilling Chang Asian Bistro.

Here in Australia, Cardenas has worked as head chef at Club Colombia Cafe Restaurant, Café four7six, Waterfront, Copycat, and Royal Saxon before joining Kickon Group this year.

Cardenas will join Culinary Director Jake Furst to launch the Latin-American eatery that is expected to be a vibrant addition to Collingwood.

Dishes on Cardenas and Furst’s menu include octopus tostada, with Peruvian olive, coriander and habanero; wood-fired Provoletta with heirloom tomato; and rainbow trout with salsa macha, charred pineapple, and purple corn tortilla.

Guests can also choose from a range of feed-me menus ranging from $70 per person to $149 per person.

Pincho Disco is set to open 17 November at 59 Cambridge Street, Collingwood, Victoria.
