The forces behind some of the city’s most acclaimed restaurants will launch a new venue come March 2023.

The Bentley Group’s Brent Savage and Nick Hildebrandt have confirmed they are collaborating with Capella Hotels and Resorts to open Brasserie 1930 just off Bridge Street in Sydney’s CBD.

“We are really excited to be partnering with Capella to open Brasserie 1930,” says Savage.

“The heritage dining room is one of the most beautiful we’ve seen, and our intention is to create a Sydney institution. The menu will hero brasserie classics done our way.”

The Sandstone Precinct is getting some serious attention from restaurateurs, with House Made Hospitality (Hinchcliff House; This Way Canteen) confirming they will open Club Martinez just up the way.

The venue will open in autumn next year opposite Hinchcliff House in Quay Quarter Tower and see Alex Wong and Andrea Sonnante headline the culinary offering, which will revolve around southern French cuisine served across a salon-style dining room and kitchen counter.

Merivale is also slated to launch a subterranean restaurant next year in the Burns Philp Building according to Good Food, with the group securing the basement site in the first half of last year.

Brasserie 1930’s menu will highlight produce from small and independent makers with culinary techniques set to include curing, smoking, fermenting, preserving and pickling. The kitchen will also be fitted out with a charcoal grill.

Hildebrandt is gearing up to hone in on newer winemakers from Australia and Europe to fill out the list as well as rare bottles from Bentley’s Wine Vault.

“The wine program has been designed to not only pair with the food menu, but also with the elegant, glamorous dining room,” he says.

“Our shared focus with Capella is on the guests, and we feel that Brasserie 1930 combines a level of grandeur and comfort we haven’t before seen in Sydney.”

The bistro will be the latest addition to the group’s portfolio which spans Bentley, Monopole, Cirrus and Yellow.
