Dedes Group opens Sala in former Flying Fish Sydney site

Dedes Waterfront Group has confirmed it will launch Italian seafood restaurant Sala on Jones Bay Wharf in Sydney’s Pyrmont this month. The site has remained vacant since The Star Sydney closed Chuuka in October 2021 – a Japanese-Chinese restaurant helmed by Chase Kojima and Victor Liong. Dedes has teamed up with Danny Russo from The Russolini Group, who has taken on the the executive chef position.

Ex-Townsville café operators hit with $29,000+ in fines

The Fair Work Ombudsman has secured $29,200 in penalties against the former operators of a café in Northern Queensland. A penalty of $26,000 was imposed against Smart Vision Developments (Qld) Pty Ltd, which operated the Grand Central Café in Townsville’s Central Village precinct until it ceased trading. The court also imposed a penalty of $3,200 against the company’s former director John Atkinson.
