Love Tilly Group’s Fabbrica has moved into the pub game with the opening of a pasta bar in Sydney’s Balmain.

The sibling venue of Ragazzi fast gained a reputation as one of the CBD’s go-to spots for sandwiches, fresh pasta and wine after its launch in 2020.

And now it’s arrived in the Inner West, with diners able to enjoy its signature house-made pasta and minimal-intervention wine list on the ground floor of the Exchange Hotel until the end of the year.

Executive Chef Scott McComas-Williams has put together the menu alongside Head Chef Nikhil Bhanot, with the group’s signature cacio e pepe listed alongside casarecce alla norma, urchin tonnarelli and malfadine with ‘nduja and prawns.

There’s also plenty to choose beyond pasta, with the kitchen team developing their riff on a classic pub schnitzel, a cotoletta alla Molanese, as well as vitello tonnato and hazelnut tiramisu.

Love Tilly Group Co-Founder and Sommelier Matt Swieboda and Group Operations and Beverage Manager Melissa Moore are behind the wine program, which revolves around lo-fi Italian drops as well as bottles from Australian growers.

“Expect plenty of skin-contact wines, chilled reds and a smattering of innovative global styles,” says Moore.

Craft beers are also on tap and cover brews from Young Henrys and Grifter.

Fabbrica Pasta Bar Balmain is open Wednesday to Friday for dinner and Saturday and Sunday for lunch and dinner.
