The group has lodged a development application to revitalise the Brisbane destination into a multi-faceted hospitality experience.
The start date for the renovations is dependent on the development application’s approval, but are scheduled to take seven months with hopes to open during the first half of 2024.
The renovations will involve the demolishment of the site’s cafe, to build the two-level venue Pavilion which will include a dining space, gin distillery and a First Nations’ herb and good garden.
The rooftop will also see the traditional owners of Mount Coot-tha hold experiences showcasing the native foods and sharing stories from local legends.
Guests will also be able to soak in the surrounding views, with a connecting bridge to a viewing platform.
The renovation will also include transforming the existing, heritage-listed restaurant to offer an elevated dining experience alongside a casual bar.
The ground floor of the restaurant will also act as a theatre, depicting the culture and history of the Mount Coot-tha traditional indigenous owners.
“What we are proposing is transformational and presents The Summit as an iconic and exciting site for locals and visitors to Brisbane,” says Mantle Group Hospitality owner Godfrey Mantle.
“Both the restaurant and the café are in dire need of significant work plus we want to optimise the venues to take advantage of the spectacular views.”
Mantle Group Hospitality will work with architects Hogg and Lamb for the proposed renovations.
