Brunswick East bar and bottle shop Bahama Gold has appointed its first head chef.

Jane Low joins the vinyl-centric venue after time at some of Melbourne’s most lauded dining institutions including The Lake House and Neighbourhood Wine as well as stints cooking in London.

Low’s debut menu is a culmination of her recent travels across the Mediterranean as well as her Malaysian heritage.

“I’m absolutely thrilled to be given this opportunity at Bahama Gold, where I can draw from my childhood in Malaysia, experience in London and what I’ve learned in Australia by working with local fruits and vegetables,” says the chef.

“The menu is going to be a significantly smaller offering … which will allow me the freedom to work more organically with suppliers and use super unique and seasonal produce.”

The chef is collaborating with Two Hands, who work alongside fishermen and fisheries, as well as Force of Nature, who grow everything from heirloom cucumbers to fennel pollen, chillies and specialty Italian veg including Tardivo radicchio and pink rhubarb.

While Low will switch up the menu weekly, launch plates cover steamed mussels with Chinese pickled cucumnbers; lamb tartare and sambal schiacciata, which will see different toppings served on flatbread.

Bahama Gold is the third venue from Almay Jordaan and Simon Denman, who also run Neighbourhood Wine and Old Palm Liquor.
