Public Hospitality has completed the final stage of century-old pub The Strand Hotel in Sydney’s Darlinghurst.
The four-level venue encompasses a bistro, which launched earlier in the year, alongside a newly opened rooftop bar and 17-room hotel.
“We’ve designed the rooftop to provide an unexpected and charming escape amongst the anonymity of William Street, with a deliberate strong contrast to the aesthetic experienced through the brooding texture and materials of the hotel rooms and Bistro below,” says Tom de Plater, principal architect.
The French Tart and a dirty martini are the house specialties when it comes to the cocktail list, with a Parisian-style menu designed to pair with drinks.
Share plates include charcuterie and cheese served with a warm baguette, prawn cocktail, corn Gruyere croquettes, beef sliders and vodka with caviar.
The Rooftop completes the hospitality offering at The Strand, which saw the launch of a French bistro in May open for all-day dining.
