Melbourne-based hospitality group Trader House has confirmed new chef appointments at Cumulus Inc. and Cutler & Co.

Tana Rattananikom has worked at Cutler & Co. since 2016 and has now moved over to Cumulus Inc. as head chef.

Rattananikom has spent the last six years working his way up the ladder, taking on the senior sous chef at Cutler & Co. before running Marion’s kitchen as head chef, and most recently, Cutler & Co.

The chef has spent most of his career in the fine dining realm, completing an apprenticeship at Black in Sydney before heading to Melbourne to work at Stokehouse.

Rattananikom’s new role also signals the return of seven-day lunch and dinner trade at Cumulus.

Cumulus will run a seasonal dish under $30, which is available from 12-4pm and kicks off with gnocchetti sardi, Jonella Farm asparagus, zucchini and Pecorino Romano.

Jordan Claveron has taken over Rattananikom’s head chef position at Cutler & Co. and joins after time at Cape at Cape Schanck.

Claveron spent much of his career working at restaurants across the globe, including Atelier de Joël Robuchon and Domonique Bouchet, before making the move to Australia.

Cutler & Co. will also be extending its hours with dinner service commencing Wednesday to Saturday from 19 October and all-day dining on offer from 12pm until late on Sunday.

The restaurant’s Sunday lunch menu will change throughout the month, with four courses available for $95 with an optional $55 wine pairing.
