Australasia’s Best Bar and Sydney-based group Public Hospitality are teaming up to open a new venue in Paddington.

The two forces have come together to launch a Mexican-inspired bar called El Primo Sanchez in The Rose Hotel in December.

The concept will take over the ground floor of the venue and serve cocktails that center around agave spirits and Mexican ingredients.

“We love what Public Hospitality do with their venues and it’s been fun working with Anna [Touhy] and the team so we can’t wait to bring El Primo Sanchez to life with them,” says Vince Lombardo, The Maybe Group co-founder.

“You can still expect the same high level of hospitality, playful energy, brilliant cocktails and attention to detail as our other bars. It will just be wrapped up into a Mexican environment with more of a laidback pub vibe than a high-end cocktail bar.”

Along with cocktails, El Primo Sanchez is set to offer a snappy food menu covering more traditional Mexican dishes to share as well as a selection of tacos.

El Primo Sanchez will mark the second Paddington project for Public Hospitality, which recently opened neighbouring venue the Oxford House hotel.

“We are excited to begin our journey with The Maybe Group in our beloved Rose Hotel in Paddington,” says Anna Touhy, group general manager F&B.

“The Maybe team have developed world-acclaimed products which we have admired for some time.”

El Primo Sanchez joins Maybe Group’s growing portfolio of venues Maybe Sammy, Sammy Junior, Maybe Frank and Dean & Nancy on 22.

Maybe Sammy recently secured the no.29 position on the World’s 50 Best Bars list, making it the highest-ranking Australian venue for the fourth consecutive year.

El Primo Sanchez will open on a yet-to-be-confirmed date in December and operate five nights per week. The venue will also run two weekly lunch services.
