The much-anticipated, 40-seat, Italian-inspired bar will open in the Sydney CBD on 14 June as part of the new Hotel Morris.

The opening comes after the announcement last year that the venue will open in 2023 after a three-year renovation.

Italy-born Rosy Scatigna has been appointed as head chef, after spending time in the Michelin-starred Lume in Milan, The Hand & Flowers in Marlow, and more recently in Sydney at Aria and Shell House.

Scatigna’s Italian-inspired menu draws from her time growing up in Puglia and studying at the Alma International School of Italian cuisine.

The day-to-night, share menu features modernised Italian flavours, with highlights including the ‘nduja madeleine with a cheesy savoury sponge, guanciale and ‘nduja emulsion, spelt and garlic panfoccacia, and mussels gratinate with saffron aioli.

On the drinks front, the wine list stars a selection of Australian and Italian producers with names including Foradori, Cullen, Fighting Gully Road, Aphelion, and Gilbert.

Tom Bulmer of The Social Spirits has designed the cocktail offering which includes a range of signature cocktails such as the negroni speziato with Chinese five spice infused gin and amaro.

The design of Bar Morris sees a marble bar, velvet banquet seating, custom-made pendant lighting, and artwork by local artists across the walls.

Hotel Morris is set to be run by Accor, and will be the first of their Handwritten Collection venues to open in Australia.

Bar Morris and Hotel Morris opens on 14 June, and is located at 412 Pitt Street, Sydney.
