Alessandro Pavoni is fronting a new all-day Italian restaurant in Manly, which is slated to launch later this year in time for summer.

Cibaria is part of the recently developed Manly Pacific Hotel and Pavoni and his wife Annna’s Sydney portfolio of Italian restaurants spanning a’Mare, Ormeggio at The Spit, Chiosco, and Postino Osteria, which will soon open in Summer Hill.

Naturally, Cibaria will offer guests food and beverage that is distinctively Italian via a menu that’s split up into three sections: braceria, forneria, spaghetteria, and pasticceria.

Cibaria will also serve Pavoni’s signature gelato artigianale that will be available for the first time outside of Ormeggio for takeaway via a gelateria counter.

“This will be a space that embraces the European way of socialising, all day every day,” says Pavoni.

“Where a caffé turns into aperitivo, turns into a meal with friends with incredible wines. It is meeting place for friends, for families, or a late-night cocktail and gelato after your passaggiata along the beachfront.”

The restaurant’s kitchen will be led by Gianmarco Pardini, who will move over from Ormeggio to open the restaurant, which will make its debut later this year.

“As a Northern Beaches local, I know what opportunity there is in the area,” says Pavoni. “I can’t wait to add to the Manly dining scene.”
