Halcyon House’s fine diner Paper Daisy has welcomed a new executive chef, and it’s a familiar face.

Andrew Milford has worked at the Cabarita Beach restaurant since 2016, taking over the role from Jason Barratt.

“The culture at Halcyon House and Paper Daisy is second to none, so to have my work recognised and be given the opportunity to take the next step in my career at a place I love is terrific,” he says.

“I also really enjoy working with the kitchen team and having junior chefs grow and get inspired by the things we create together, so this will also be a focus for me. It’s one of the most rewarding aspects of being a chef”

Prior to joining the team eight years ago, Milford worked at Orpheus Island Resort, Wilson Island Ecolodge and also as a private chef in the French Alps.

The chef plans to keep the menu seafood-forward and local produce-driven, introducing several new dishes that will be available in a two-course lunch or dinner format.

“The provenance of ingredients and seasonality is an important part of our philosophy at Paper Daisy,” he says.

“We love sharing the story behind each dish and it allows us to take guests on that journey when they dine with us.”
